I made these on a cold & wet Winter's afternoon as a treat with what I had in the house, because I was craving something sweet & warm (and I always say that if you deny yourself something you'll want it more, so have a little bit every now and then :P) Cheap, quick, easy and the oven warmed the house.
They hit the spot.
Ingredients:
2 pears, cubed
2 tbspns mango jam
2 sheets puff pastry
a little water
Canola cooking spray
thickened cream
Preheat oven at 200° C. Bring pears & water to the boil in a saucepan then lower heat to simmer for a minute, stirring constantly. Add one of the tablespoons of mango jam & stir until melted. Remove from heat.
Spray an 8-cup muffin tin with cooking spray. Cut the puff pastry into 4 squares each sheet. Line base of muffin tin cups with puff pastry. Spoon about half a tablespoon of the pear mixture into each of the puff pastry cups. Dollop a little mango jam on top and fold puff pastry over so the mixture is covered.
Bake in oven for 10-15 mins until golden brown. Scoop the tarts out and serve with a small dollop of thickened cream.
